MHM Hack # 1: Apple Crostatas Using Mother Hubbard's Plain Scone Mix
- 1 Bag of Plain Mother Hubbard's Scone Mix
- 250 ml water
- 3 Tbs of your favorite custard
- 5 apples or pears, cut into thin wedges
- Up to 2 tbs of butter
- Icing sugar for decoration (optional)
- 1/4 - 1/2 cup of melted chocolate (optional)
Cut the dough into 9 equal portions, roughly shape each into a round ball.
On a lightly floured surface, roll each ball into a 5 inch round disk.
Place 3 tablespoons of custard in the center and spread out with the back of a spoon leaving a 2-inch border of dough for folding.
Peel skin off apples or pears, cut into thin wedges and saute in a pan with butter. Add a pinch of cinnamon if you wish. When the fruit is soft but not mushy, it's ready. Let cool and place on top of the custard.
Use about 1/2 of a large apple or pear for each crostata (you can overfill each one as the fruit will shrink during baking).
Fold and crimp dough up and around the fruit and bake as per instructions. Optional: sprinkle with coarse sugar before baking.
Dust with icing sugar or drizzle with melted dark chocolate.
